A Universe Unknown

What if humans didn't have eyes? Would the universe be beautiful but unnoticed; existent but unknown?

Many strict solipsist philosophers believed that, since our own senses are the only proof we have that the world exists, the universe would not exist were it to have no observers (living, conscious beings). It's reminiscent of the "if a tree falls in the forest and no one's around..." question.
